For the Doughnuts

  • 3 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon ground ginger
  • 1 tsp of cinnamon
  • 1/2 teaspoon of salt
  • 3/4 cup regular molasses or 1/3 cup blackstrap molasses
  • 3/4 cup of margarine (I use Becel plant base)
  • 1/2 cup of applesauce
  • 11/2 tsp baking soda
  • 1/2 hot black coffee

For the icing

  • 2 cups of powdered sugar
  • 1 1/2 tsp. maple syrup
  • 3 tablespoons almond milk
  • 1/4 teaspoon cinnamon

For the doughnuts

  1. Preheat the oven to 375 ˚F
  2. Pour all the ingredients into a bowl, omitting the baking soda and coffee
  3. Add the baking soda to the coffee and mix well.
  4. Add the coffee mixture to the bowl with the other ingredients and beat to combine all the ingredients.
  5. Pour the batter into the donut pan and bake for 12 minutes.
  6. Remove from the oven and leave to cool before glazing.

For the icing

  1. While the donuts are cooling, mix together the ingredients for the frosting.
  2. When the frosting is done and the donuts are cool, dip the tops of the donuts and return them to the cooling rack.
  3. If you are looking for a thick frosting, dip the donuts twice after the first dip is lightly set.
  4. Sprinkle with Christmas candy if desired.
