Pasta with Edamame Pesto is an easy, quick and delicious cuisine that takes about 25 minutes to cook. I have saved this recipe for those days when I don’t feel like chopping, frying or baking. It only requires soaking, mixing and boiling. After all, everyone has those hungry days when we feel too lazy or tired to chop ingredients.
Pasta is an Italian cuisine relished across the world with delight. The fabulous thing about cooking pasta is that each individual can prepare it with their personal touch. The little twist of taste added by individual taste preferences and available ingredients of specific regions makes the pasta even more delightful. Today, I have chosen to serve my freshly cooked pasta on a plate of Edamame pesto to celebrate Saint Patrick Day. The delicate green hue of edamame mixed with cashews, topped with steaming hot pasta and some light seasoning spreads an inviting fragrance which is quite difficult to resist.
This Pasta with Edamame Pesto is a yummy relief from the oily rich cuisines. It is a healthy and tasty version of a vegan pasta recipe. For the spaghetti, I prefer to use whole grain ones as they contain fiber, iron, and calcium. Additionally, whole grain pasta is a great source of various nutrients namely magnesium, potassium and selenium. Selenium serves as an antioxidant. Edamame are a good source of protein are great to maintain good health. The cashews are used in various recipes to get a creamy rich texture and nutty flavour. Cashews are not just a tasty but it has a host of health benefits too. Cashews can help keep the heart strong, prevents anaemia, increases immunity, helps maintain good bone health etc. This recipe uses nutritional yeast because as the name suggests it is very nutritious. It is packed with lots of vitamins, minerals, antioxidant properties, and protein. Similar to cashews, nutritional yeast also helps in elevating immunity.

Pasta with Edamame Pesto
- Prep Time: 10 minutes
- Cook Time: 20 minutes

Ingredients
- 400 g of pasta of your choice
- 1 cup frozen edamame
- ½ cup cashew soaked
- ½ cup nutritional yeast
- 3 tbsp. olive oil
- water if needed
- salt and pepper
Instructions
- Soak the cashew in hot water for 30 minutes
- Cook the edamame for 10 minutes in boiling water
- Prepare the pesto by mixing together the edamame with the soaked cashew, the olive oil and the nutritional yeast and water (if you feel that it is not necessary to untie the pesto, you do not have to add the water). Mix again. Add salt and pepper to taste.
- Cook the pasta in boiling water.
- Serve pasta with pesto
