    Packed with an assortment of thinly-sliced, zucchini, yellow squash, onion and tomatoes. The vegetables are baked until they soften up but don’t lose their freshness. Plus It’s layered with a sharp cheddar cheese, to adds an explosion of flavor to the dish.

    This Cheesy Summer Squash and Zucchini Casserole is a colorful side dish that will make your mouth pool with water as soon as you set your eye on it. This side dish adds a pinwheel of color to your dining table and lures everyone in. It’s a quite pretty sight to look at.

    Summer squash or yellow zucchini and green zucchini: the peel contains fiber, vitamins and minerals, so don't hesitate to eat it!

    Italian tomato: These very fleshy tomatoes contain few seeds. Their firm and dense flesh has a pronounced and tangy taste

    Red onion: you can also use yellow onion.

    The preparation

    • Place the zucchinis, yellow squash, onion and tomatoes slices in a bowl. Season with salt and a drizzle of olive oil. Mix. Leave to macerate for 15 minutes.
    • Place the vegetables alternately in the dish. Tighten well.
    • Drizzle with more olive oil, sprinkle onion powder, garlic powder salt and pepper.
    • Add cheese on top
    • Bake at 375 ° F for 40 minutes.
