Once the oil is hot add the beef, onion, pepper, and garlic cook for 10 minutes or until the meat is completely cooked. Remove excess fat if needed

Add in the spices, black beans, diced tomatoes, and beef stock. Turn heat down to low heat and simmer for 20 minutes. Add the corn in the last 5 minutes of cooking
