Ingredients

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoon olive oil
  • 1 cauliflower cut into small florets
  • 1 cup cooked rice
  • cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon whole grain mustard
  • 1 teaspoon coriander grounded seeds
  • 1 red bell pepper diced
  • 1 cup chickpeas
  • ¼ cup parsley finely chopped

Instructions

  • Preheat the oven to 375 °F
  • Cut the cauliflower in florets, place on a baking. Add olive, salt and pepper mix well
  • Cook the cauliflower for 20 to 25 minutes.
  • In a large bowl, whisk olive oil, lemon juice, mustard, and coriander seeds.
  • Add cauliflower, rice, bell pepper, chickpeas, and parsley. Stir well and serve.
