Ingredients

  • 6 onion
  • 4 cups vegetable broth
  • 1 bottle 341 ml beer
  • fresh thyme to taste
  • 1 tablespoon dijon mustard
  • 4 slices french bread
  • 2 tablespoon olive oil
  • 1 cup Swiss Cheese
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 3 tablespoon maple syrup

Instructions

  • Preheat your oven t0 375 F
  • When your oven is preheated, place your bread slices on a baking sheet, brush olive oil across both sides of each slice, and bake for 7-10 minutes, or until golden brown
  • Meanwhile, slice the onions into thin strips
  • Heat a saucepan over medium to medium-low heat with some olive oil
  • Add your onions, maple syrup, and some salt and pepper and let everything cook slowly for about 25 minutes
  • When your 25 minutes are up and your onions have transformed into a deep golden brown, add your beer let it cook for 5 minutes and then add the vegetable broth and the thyme .
  • Bring the soup to a boil, reduce to a simmer, and cook for 15 minutes Season to taste with salt and pepper
  • Turn your oven onto broil
  • Poor the soup into bowls, and place the bowls on a baking sheet
  • Place 1 slice of bread on top of the soup, and top with cheese (about ¼ cup)
  • Place under the broiler for 1-3 minutes until the cheese is melted
  • Serve immediately!
