Ingredients

  • 2 carrots chopped
  • 1 cup blanched green beans
  • 1 minced red pepper
  • 1 cup baby potatoes cooked
  • 4 baby spinach cups
  • ¼ cup fresh coriander

Sauce

  • ¼ cup peanut butter
  • 1 tablespoon tamari sauce
  • 3 tablespoon maple syrup
  • 4 tablespoon lime juice
  • red pepper flakes to taste

Instructions

Salad

  • Blanch the green beans, 5 minutes in boiling water
  • On a large plate (or on individual plates), add all the fresh ingredients: start by making a bed of spinach, add the green bean carrots, bell pepper, potato and coriander.

Sauce

  • Prepare the peanut sauce by adding the peanut butter, tamari sauce, maple syrup, lime juice, red pepper flakes in a small bowl and whisking. Add a little water if necessary.
