Halloween Pasta Salad

Ingredients

Pasta:

  • 1 package 16 ounce black bean pasta spaghetti or regular spaghetti with black food coloring

Salad:

  • 1 orange bell pepper or 1 red bell pepper
  • ¼ cup red cabbage grated
  • 2 green onions
  • ¼ cup black olives pitted and sliced
  • 2 cheese strings sliced into tiny "eyeballs"

Dressing for a quick salad you can also use Italian dressing

  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon salt adjust to taste
  • 1 ½ teaspoons black pepper adjust to taste
  • Optional: parmesan cheese fresh basil.

Instructions

  • Start by bringing a large pot of salted water to a boil. Once the water is boiling, add the black bean spaghetti and cook according to the package instructions. Usually, it takes about 7-9 minutes. Be careful not to overcook it; you want the pasta to be al dente. Once cooked, drain and rinse it under cold water to cool and prevent it from sticking.
  • While the pasta is cooking, prepare your vegetables,cut the bell pepper and green onion in small pieces and grate the red cabbage. ( if you have a small cookie cutters in a shape of a start you can use it to cut the bell pepper)
  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Taste the dressing and adjust the salt and pepper to your liking. The dressing should be well-balanced with a hint of tanginess and a touch of saltiness.
  • In a large mixing bowl, combine the cooled cooked pasta, bell peppers, green onions and grated red cabbage.
  • Using a sharp knife, carefully cut the cheese string into thick rounds, which will serve as the whites of your eyes. Next, employ a metal straw or any small, circular object to create a hole in the center of each cheese round. Finally, nestle a slice of small black olive in the midst of each cheese disc to craft a hauntingly spooky pupil.
  • Refrigerate the Halloween Pasta Salad for at least 30 minutes before serving. This will allow the flavors to meld together and make it even more delicious.
  • Serve your spooky pasta salad in a festive Halloween-themed large bowl or serving dish.
