Ingredients

  • 2 large sweet potatoes peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 3 tablespoons maple syrup
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Set your air fryer to 390°F and let it preheat for a few minutes.
  • Peel the sweet potatoes and cut them into evenly-sized 1-inch cubes. This ensures even cooking in the air fryer.
  • In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, maple syrup, salt, and pepper. Make sure the sweet potatoes are well coated with the seasonings.
  • Place the seasoned sweet potato cubes in the air fryer basket, spreading them out in a single layer. This allows for better air circulation and even cooking.
  • Cook the sweet potatoes in the air fryer for 15-20 minutes, shaking the basket or stirring the sweet potatoes halfway through the cooking time. Air fryers can vary, so check for doneness by testing with a fork. They should be golden brown and tender.
  • Once the sweet potatoes are cooked to perfection, remove them from the air fryer and transfer to a serving dish. Sprinkle freshly chopped parsley over the top for a burst of freshness.

STORAGE

To store leftovers, allow the cubed sweet potatoes to cool to room temperature. Then, transfer them to an airtight container and refrigerate. Properly stored, they can last in the refrigerator for up to 3-4 days.
While sweet potatoes can be frozen, keep in mind that the texture might change slightly upon thawing. If you plan to freeze them, arrange the cooled sweet potatoes in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container.
