Preheat your oven to 375°F. Line a baking sheet with aluminum foil or parchment paper for least amount of cleanup.
Pat dry the bacon with paper towels
Place a wire rack on top of the prepared sheet pan. Arrange the thick-cut bacon slices on the rack, on a single layer ensuring they are not overlapping. You can spray the wire rack with cooking spray to prevent the bacon from sticking to it.
In a small bowl, mix together the packed light brown sugar, maple syrup, cracked black pepper, and red pepper flakes. Stir until the sugar is mostly dissolved and the mixture is well combined.
Brush the bacon slices generously with the brown sugar mixture, ensuring each slice is coated on both sides. Use a brush or the back of a spoon to spread the glaze evenly.
Place the bacon in the preheated top third of the oven and bake for about 20-25 minutes or until the bacon reaches your desired level of crispiness. Keep an eye on it to prevent burning.
Keep an eye on the bacon in the last few minutes to ensure it doesn't overcook. The edges should be crispy, and the glaze should be caramelized.
Once the bacon is cooked to perfection, remove it from the oven. Allow it to cool for a few minutes on the wire rack. The glaze will continue to set as it cools.
Serve the Billionaire Bacon as a unique side dish, or even crumbled over salads for a sweet and savory twist.
