Equipment

  • Air fryer
  • Mixing bowls
  • Whisk
  • Tongs
  • Spatula

Ingredients

  • 1 medium head of cauliflower chopped into florets
  • ¾ cup all-purpose flour
  • 2 tablespoon cornstarch
  • ¾ cup milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon chili powder
  • Salt to taste
  • 1 cup panko breadcrumbs

Bang Bang Sauce

  • ½ cup mayonnaise
  • 1 teaspoon sriracha more for spicier
  • 2 tablespoon maple syrup

Instructions

  • In a mixing bowl, whisk flour, cornstarch, milk, oil, chili powder, and salt until smooth.
  • Place panko in a shallow dish.
  • Dip cauliflower florets in the batter, then press into panko until fully coated.
  • Arrange florets in a single layer in the air fryer basket.
  • Air fry at 400°F for 8 minutes.
  • While cooking, whisk together mayo, sriracha, and maple syrup for the sauce.
  • Transfer cooked florets to a bowl, toss with sauce until coated.
  • Return coated florets to air fryer and cook 4 more minutes at 400°F.
  • Serve hot with extra sauce if desired.

Notes

Double the sauce if you like things extra saucy.
Don’t skip the second round in the air fryer, it helps the sauce stick and caramelize.
For a lighter version, bake instead of air fry.
These are best eaten fresh, but reheating in the air fryer does the trick.
