Equipment

  • Cast iron skillet or heavy pan
  • Small mixing bowl
  • Tongs
  • Cutting board
  • Knife

Ingredients

  • 2 strip loin steaks about 8 oz each, 1 inch thick
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  • Remove the steaks from the refrigerator and allow them to sit at room temperature for about 20 minutes.
  • In a small bowl combine garlic powder, onion powder, smoked paprika, chipotle powder, salt, and black pepper.
  • Pat the steaks dry with paper towels so the surface is completely dry.
  • Rub the seasoning mixture evenly over both sides of the steaks.
  • Heat a heavy skillet over medium-high heat until very hot.
  • Add the butter and immediately place the steaks into the pan.
  • Cook the steaks for about 3–4 minutes without moving them so a dark crust forms.
  • Flip the steaks using tongs and cook another 3–4 minutes for medium doneness.
  • Transfer the steaks to a plate and let them rest for 5 minutes before slicing.
  • Slice against the grain and sprinkle with fresh parsley before serving.

Notes

• A cast iron skillet gives the best crust.
• Always pat the steak dry before seasoning.
• Let the steak rest so the juices stay inside.
• Slice against the grain for the most tender bites.
