Equipment

  • Sheet pan or 9x13 baking dish
  • Parchment paper
  • large mixing bowl
  • Instant read thermometer (optional but helpful)

Ingredients

  • 6 to 8 boneless skinless chicken thighs about 1.5 pounds
  • 1.5 pounds potatoes diced into ¾ inch cubes
  • 3 tablespoons olive oil
  • 1 ½ tablespoons ranch seasoning
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • Fresh parsley chopped, for serving

Instructions

  • Preheat your oven to 425°F. Line a large sheet pan or 9x13 baking dish with parchment paper.
  • Arrange the diced potatoes in a single layer across the pan, leaving space between the pieces so they roast instead of steam.
  • Pat the chicken thighs completely dry with paper towels, this step helps them brown properly in the oven.
  • Nestle the chicken thighs into the gaps between the potatoes so both are in direct contact with the pan.
  • Season everything evenly with the ranch seasoning, salt, and pepper, then drizzle the olive oil over the top.
  • Bake for 30 minutes, until the chicken is golden and the potatoes are fork tender.
  • Remove the pan from the oven, top the chicken with the shredded cheddar, and bake for another 4 minutes until the cheese is melted and bubbly.
  • Garnish with fresh parsley and serve warm.

Notes

  • Dice the potatoes small and even so they finish cooking at the same time as the chicken.
  • Sharp cheddar melts smoother than mild cheddar and holds up better under the broiler if you want extra color.
  • Leftovers reheat best in the oven or air fryer to keep the potatoes crispy.
  • Swap in pepper jack cheese for a spicier version the whole family can adjust to their taste.
