- 2 cloves garlic minced
- 1 medium red onion finely chopped
- 1 cup chicken broth
- 1 cup milk
- 1 package (20oz) cheese tortellini
- 4 cups fresh broccoli chopped
- ¾ cup grated Parmesan cheese
- 3 cooked chicken breasts cubed
- Salt and black pepper to taste
- Fresh parsley for garnish
Heat olive oil in a large skillet over medium heat. Add garlic and onion. Cook for 2–3 minutes until fragrant and soft.
Stir in chicken broth and milk. Bring to a gentle simmer.
Add chopped broccoli, cover, and cook 4–5 minutes until tender-crisp.
In a separate pot, cook tortellini according to package directions. Drain well.
Add cooked chicken and tortellini to the skillet. Stir to coat in sauce.
Add Parmesan cheese and stir until melted and creamy.
Season with salt and pepper. Garnish with fresh parsley and serve immediately.
