Equipment

  • Medium saucepan
  • Spatula
  • Mixing spoon
  • 8×8 baking pan
  • Parchment paper

Ingredients

  • ½ cup butter
  • ½ cup smooth peanut butter
  • 1 cup semi-sweet chocolate chips
  • 5 cups rainbow mini marshmallows

Instructions

  • Line an 8×8 baking dish with parchment paper and set aside.
  • Place the butter, peanut butter, and chocolate chips in a saucepan over low heat. Stir continuously until fully melted and smooth.
  • Remove the pan from the heat and allow the mixture to cool slightly for about 2–3 minutes.
  • Add the mini marshmallows and gently fold them into the chocolate mixture until evenly coated.
  • Transfer the mixture to the prepared pan and spread evenly with a spatula.
  • Refrigerate for at least 1 hour or until the bars are firm.
  • Lift the bars from the pan using the parchment paper and cut into squares.

Notes

• Let the chocolate mixture cool slightly before adding marshmallows to keep their shape.
• If the bars are too soft, chill another 20 minutes before slicing.
• For cleaner cuts, warm your knife with hot water and wipe dry.
• Store bars in the fridge if your kitchen is warm.
