Equipment

  • A bowl
  • Cutting board
  • Knife
  • Spoon

Ingredients

Savory Cottage Cheese Bowl

  • 1 cup low fat cottage cheese
  • 1 shallot minced
  • 1 mini cucumber or ½ cup diced cucumber
  • ½ medium yellow bell pepper chopped
  • 1 Roma tomato diced
  • 1 tablespoon white balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil chopped

Sweet Cottage Cheese Bowl

  • 1 cup cottage cheese
  • ½ cup fresh berries
  • ¼ cup granola
  • 1 tablespoon maple syrup

Instructions

Savory Cottage Cheese Bowl

  • Dice the cucumber, bell pepper, and tomato. Mince the shallot and chop the basil.
  • Spoon the cottage cheese into a bowl and smooth the top.
  • Arrange the cucumber, bell pepper, tomato, and shallot over the cottage cheese, either mixed in or in sections.
  • Pour the white balsamic vinegar over the top and season with salt and pepper.
  • Top with fresh basil and serve right away.

Sweet Cottage Cheese Bowl

  • Spoon the cottage cheese into a bowl.
  • Top with fresh berries, one type or a mix.
  • Sprinkle granola over the berries.
  • Drizzle with maple syrup and serve immediately.

Notes

  • Use white balsamic in the savory bowl, regular balsamic will turn everything an odd pink shade.
  • Add granola right before eating so it stays crunchy.
  • Low fat or full fat cottage cheese both work fine, it's really about personal preference.
  • Frozen berries work for the sweet bowl if thawed first, otherwise the bowl gets watery.
