Equipment

  • Blender or food processor
  • Mixing bowl
  • Spatula
  • Airtight container

Ingredients

  • 2 cups cottage cheese small curd
  • 3 tablespoons salsa mild, medium, or hot
  • 2 tablespoons taco seasoning homemade or store-bought
  • ¼ cup fresh cilantro chopped

Instructions

  • Combine cottage cheese, salsa, taco seasoning, and cilantro in a blender or food processor. Blend until smooth.
  • Taste and adjust seasoning — add more salsa or spice as desired.
  • Transfer to a serving bowl, cover, and refrigerate for at least 30 minutes.
  • Top with extras before serving. Serve with chips, veggies, or as a spread.

Notes

  • For ultra-smooth texture, blend, let sit 5 minutes, then blend again.
  • Use this as a taco sauce by drizzling it over tacos, burritos, or bowls.
  • Add a squeeze of lime before serving for extra brightness.
  • Store in an airtight container in the fridge for up to 4 days.
