Ingredients

  • 2 cups quick oats
  • 2 bananas mashed
  • ¼ cup peanut butter
  • cup brown sugar
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • ¼ cup chocolate chips
  • 1 teaspoon vanilla
  • ¼ cup milk of choice
  • Pinch of salt

Instructions

  • Preheat the oven to 350°F and line a sheet with parchment.
  • Mash the bananas until smooth.
  • Mix in peanut butter and sugar until combined.
  • Stir in oats, chia, and hemp seeds.
  • Add chocolate chips, vanilla, and milk.
  • Scoop the dough and flatten slightly.
  • Bake 10–12 minutes until lightly golden.
  • Cool fully before eating.

Notes

  • The riper the banana, the sweeter the cookie.
  • Letting the dough rest helps the oats soften.
  • Add cinnamon for a cozy fall flavor.
  • Use dairy-free chocolate to keep them vegan
