Mango Corn Salsa

This mango corn salsa is sweet, tangy, and just a little spicy. It comes together in 10 minutes with no cooking required. Perfect as a dip with chips or spooned over grilled fish, chicken, or tacos. The sriracha makes it easy to control the heat, which makes this totally beginner-friendly.

Ingredients

  • 1 ½ cups fresh mango diced (about 1 large mango)
  • 1 cup corn fresh or frozen and fully thawed
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon sriracha
  • 1 shallot finely diced
  • ½ cup fresh cilantro roughly chopped

Instructions

  • Peel and dice the mango into small, even cubes roughly the same size as the corn kernels. Set aside.
  • If your corn is frozen, spread it on a plate and allow it to thaw at room temperature for 10 minutes. Drain off any excess liquid before using.
  • Finely dice the shallot into very small pieces.
  • Roughly chop the fresh cilantro leaves.
  • Add the diced mango, corn, shallot, and cilantro to a medium mixing bowl.
  • Pour the fresh lime juice over the mixture and add the lime zest.
  • Add the sriracha and stir gently until everything is evenly combined.
  • Taste the salsa and adjust. Add more lime juice for extra tang or a little more sriracha for more heat.
  • Serve immediately or refrigerate for 15 minutes before serving to let the flavors develop.

Notes

  • How to tell if your mango is ripe: Gently squeeze it. It should feel like a ripe avocado, firm with a little give. Sniff the stem end. A ripe mango smells sweet and tropical.
  • No sriracha? Swap it for half a finely diced jalapeño (seeds removed for mild, seeds in for hot) or a pinch of cayenne.
  • Want more depth? Toast your thawed corn in a dry hot pan for 2-3 minutes until golden. It adds a slightly smoky, caramelized flavor that's worth the extra step.
  • For meal prep: This salsa keeps for up to 3 days in an airtight container in the fridge. The flavor gets better overnight. If adding avocado, do it right before serving.
