Equipment

  • Oven-safe bowls or crocks (4 total)
  • Rimmed baking sheet
  • Broiler (in your oven)
  • Saucepan or microwave (to warm gravy, corn, and potatoes)
  • Cheese grater (if shredding cheese fresh)
  • Tongs or spoon (for assembling bowls)

Ingredients

  • 4 cups prepared mashed potatoes warmed
  • 1 cup corn kernels warmed
  • ½ cup shredded cheddar
  • ½ cup shredded mozzarella
  • 1 bag 32 oz cooked chicken tenders
  • 1 cup brown gravy warmed
  • Green onion or parsley for garnish

Instructions

  • Warm mashed potatoes, corn, chicken tenders, and gravy.
  • Preheat your oven to broil.
  • Divide mashed potatoes into 4 oven-safe bowls. Top each with corn, cheeses, and cooked chicken.
  • Place bowls on a baking sheet and broil 2–3 minutes, until cheese is melted.
  • Remove from oven and drizzle with warm brown gravy.
  • Garnish with green onion and serve hot.

Notes

  • For meal prep: Assemble the bowls without broiling, cover, and refrigerate. Broil just before eating.
  • Extra crispy chicken: Use an air fryer instead of baking.
  • Gravy shortcut: A good-quality jarred gravy works in a pinch.
  • Make it meatless: Use vegetarian “chicken” tenders or crispy chickpeas.
