Ninja Creami Cottage Cheese Chocolate Ice Cream

Equipment

  • High-speed blender or food processor

Ingredients

  • cups full-fat cottage cheese
  • ½ cup whole milk
  • ¼ cup maple syrup
  • 2 tablespoons dry chocolate pudding mix not prepared, just the dry powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1 pinch of salt

Instructions

  • Place the cottage cheese, milk, maple syrup, dry chocolate pudding mix, cocoa powder, vanilla extract, and salt into a blender.
  • Blend on high speed for 60 to 90 seconds until the mixture is completely smooth and no lumps remain. Scrape down the sides if needed and blend again.
  • Pour the blended mixture into a Ninja Creami pint container, filling it to the max fill line. Do not overfill.
  • Secure the lid tightly and place the pint flat in your freezer. Freeze for a minimum of 24 hours.
  • When ready to spin, remove the pint from the freezer and let it rest on the counter for 5 minutes.
  • Install the pint into the Ninja Creami outer bowl, lock it in, and select the "Ice Cream" function. Allow the full cycle to complete.
  • Remove the pint and check the texture. If the surface looks crumbly or uneven, select "Re-spin" and run a second cycle.
  • Scoop and serve immediately for the best texture.

Notes

  • Full-fat cottage cheese matters. Low-fat versions tend to produce a slightly icier result. If full-fat is all you have, go for it, but full-fat is worth it here.
  • Dutch-process cocoa gives you a richer, darker chocolate flavor. Regular unsweetened cocoa works perfectly too.
  • To add protein: Mix in one scoop of unflavored or chocolate protein powder before blending. You may need to add a small splash of extra milk to keep the consistency right.
  • Re-spin is your friend. If the first spin comes out a little powdery or uneven, that is totally normal. Re-spin fixes almost everything.
