Ingredients

  • 1 ½ cups full-fat cottage cheese
  • ½ cup whole milk
  • ¼ cup maple syrup
  • 2 tablespoons instant vanilla pudding mix dry, not prepared
  • 2 teaspoons pure vanilla extract
  • Pinch of salt

Instructions

  • Add the cottage cheese, milk, maple syrup, dry vanilla pudding mix, vanilla extract, and salt to a blender.
  • Blend on high speed for a full 60 to 90 seconds until the mixture is completely smooth with no lumps or curds remaining. Taste and adjust sweetness if needed.
  • Pour the blended mixture into the Ninja Creami pint container, filling it to the max fill line.
  • Secure the lid and place the pint in the freezer. Freeze for a minimum of 24 hours until completely solid.
  • When ready to serve, remove the pint from the freezer and allow it to sit on the counter for 5 minutes.
  • Install the pint into the Ninja Creami outer bowl assembly and select the "Ice Cream" function. Allow the full cycle to complete.
  • Check the texture. If the center looks powdery or crumbly, select "Re-spin" and let it run again.
  • Scoop and serve immediately.

Notes

  • Full-fat is best: Full-fat cottage cheese creates a noticeably creamier result. Low-fat works but produces a slightly icier texture.
  • The pudding mix is a stabilizer: Do not skip it if you want that smooth, dense texture. It prevents the ice cream from freezing into a hard icy block.
  • Blend completely: Any remaining cottage cheese curds will create graininess in the final ice cream. Blend longer than you think necessary.
  • Re-freezing leftovers: Store leftover ice cream in the pint with the lid on. Re-spin in the Ninja Creami when ready to serve again.
