Ingredients

  • 10 oz. shell pasta
  • 5 bacon slices cut in small pieces
  • 1 medium red onion chopped
  • 2 garlic cloves minced
  • ½ cup reserved pasta water
  • 1 ½ cups frozen peas
  • ½ cup grated Parmesan
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • fresh parsley to garnish

Instructions

  • In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain the pasta and set aside.
  • While the pasta is cooking, heat a skillet over medium heat. Add the bacon pieces and cook until crispy, about 5-7 minutes. Remove the bacon and place on a paper towel-lined plate to drain.
  • In the same skillet, using the bacon fat, add the chopped red onion. Sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  • Stir in the cooked pasta, reserved pasta water, grated Parmesan, peas , bacon salt, and black pepper. Mix well to combine. Continue cooking for 3 minutes
  • Serve the pasta hot, garnished with fresh parsley if desired.

What can I use instead of bacon?
You can substitute the bacon with turkey bacon or pancetta.
Can I make this dish in advance?
Yes, you can prepare this dish ahead of time. Store it in an airtight container in the refrigerator for up to 3 days. Reheat it in a skillet over medium heat, adding a splash of water or broth to loosen the sauce if needed.
Can I use fresh peas instead of frozen?
Yes, you can use fresh peas if you have them. They might need a slightly longer cooking time, so add them earlier in the recipe to ensure they cook through.
