- 3 ripe avocados
- ¾ cup pomegranate seeds divided
- 1 jalapeño finely diced (remove seeds for less heat)
- ¼ cup chopped fresh cilantro
- Zest of 1 lime
- Juice of 1–2 limes about 2 tablespoons
- ½ teaspoon salt or to taste
- Optional: 2 tablespoons finely diced red onion
- Optional: pinch of cumin
Cut avocados in half, remove pits, and scoop out the flesh.
In a medium bowl, mash avocados with a fork until chunky or smooth.
Add lime zest, lime juice, salt, cilantro, and diced jalapeño. Mix until combined.
Taste and adjust, more lime for brightness, more salt for flavor.
Gently fold in half of the pomegranate seeds.
Transfer to a serving bowl and top with remaining seeds.
Serve right away or cover tightly and refrigerate.
