Ingredients

in thin sliced

Instructions
Preheat the oven to 375 ˚F
With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.
Slice the bell peppers and onion
In a small bowl combine all the spices and mix.
Add tofu and vegetables on a sheet pan. Add canola oil and sprinkle spice mix, stir gently.
Place in the oven and cook for 15 minutes
Remove from the oven and add the tofu and vegetables into the tortillas and garnish with coriander, guacamole and salsa if desired.
Notes
If you have leftover, you can serve it over rice the next day
