    Weeknight meals are always a struggle.  A good weeknight meal uses a few simple ingredients that are easy to keep on hand, has lots of flavor, and can go from fridge to table in under 30 minutes. These sheet pan tofu fajitas fit the bill.

    Tofu: Extra-firm tofu keep its shape without getting too soft or crumbly.

    Tofu is a vegetarian protein rich in calcium and protein. Tofu is also a great source of amino acids and is low in calories. Try to buy your tofu Organic or GMO-free

    Spices: The dish gets its spice from the garlic powder, cumin, and chili powder.  This combo of Mexican spices gives the dish a little bit of heat and a lot of flavor.  For more of a kick, use a chili powder that contains hot peppers, or use a dash of chili flakes.

    Tortillas: Toast your tortillas in the oven or pan before serving, making them pliable and tasty.  This recipe uses flour tortillas, but you can easily substitute corn tortillas if you prefer to go the whole-grain route.  Flour tortillas however will hold more filling without disintegrating in your hands.

    Garnish: Use guacamole, salsa, lettuce, and fresh coriander.  Store-bought guac is great, but you can throw your own together while you wait for your tofu to cook.  Just scoop out the flesh of an avocado and add a little lime juice and salt.  Make it as smooth or as chunky as you’d like.  You can even add a little bit of tomato.

    Step 1: With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.

    Step 2: In a small bowl combine all the spices and mix.

    Step 3: Add tofu and vegetables to a sheet pan. Add canola oil and sprinkle spice mix, stir gently.

    Place in the oven and cook for 15 minutes

    What can I season tofu with?

    The secret is certainly the spices such as chili powder garlic powder and cumin. For best results with the Sheet Pan Tofu Fajitas, drain the tofu as much as possible so that it soaks up the marinade like a sponge. What’s great about tofu is it neutral taste that automatically pick up the flavors of the spices.

    Ingredients
      

    • 2 teaspoons chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon garlic powder
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 14 ounce extra firm tofu in thin sliced
    • 1 red bell pepper sliced
    • 1 green bell pepper sliced
    • 1 large red onion
    • 2 tablespoons canola oil
    • 8 small flour tortillas

    Garnish

    • Guacamole
    • Salsa
    • Lettuce
    • fresh coriander

    Instructions
     

    • Preheat the oven to 375 ˚F
    • With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.
    • Slice the bell peppers and onion
    • In a small bowl combine all the spices and mix.
    • Add tofu and vegetables on a sheet pan. Add canola oil and sprinkle spice mix, stir gently.
    • Place in the oven and cook for 15 minutes
    • Remove from the oven and add the tofu and vegetables into the tortillas and garnish with coriander, guacamole and salsa if desired.

    Notes

        If you have leftover, you can serve it over rice the next day
