Ingredients
- ¼ cup of lime juice
- 2 tablespoons tamari sauce
- 2 cloves minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon of paprika
- 1 teaspoon of chili powder
- 2 tablespoons canola oil
- 1 package of extra firm tofu drained and squeezed (then cut into cubes)
- 2 medium peppers any color (cut into strips)
- 1 large red onion cut into strips
- 8 small flour tortillas
Garnish
- Guacamole
- Salsa
- Lettuce
- fresh coriander
Instructions
- In a small bowl, combine lime juice, tamari sauce, garlic, oregano, cumin, paprika and chili powder.
- Add tofu cubes and let marinate for at least 1 hour.
- In a large skillet over high heat add tofu with peppers and onion cook for about 10 to 15 minutes stirring regularly during cooking until tofu is colored.
- Add the tofu mixture into the tortillas and garnish with coriander, guacamole, salsa and romaine
