Step 1: With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.
Step 2: In a small bowl combine all the spices and mix.
Step 3: Add tofu and vegetables to a sheet pan. Add canola oil and sprinkle spice mix, stir gently.

- 14 ounce extra firm tofu in thin sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 large red onion
- 2 tablespoons canola oil
- 8 small flour tortillas
- fresh coriander
- Preheat the oven to 375 ˚F
- With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.
- Slice the bell peppers and onion
- In a small bowl combine all the spices and mix.
- Add tofu and vegetables on a sheet pan. Add canola oil and sprinkle spice mix, stir gently.
- Place in the oven and cook for 15 minutes
- Remove from the oven and add the tofu and vegetables into the tortillas and garnish with coriander, guacamole and salsa if desired.
