Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ tsp. salt
  • 3 large ripe bananas coarsely mashed
  • ½ cup of plain coconut yogurt
  • 1 teaspoon sodium bicarbonate
  • ¼ cup of applesauce
  • ¾ cup sugar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips

Instructions

  • In a large bowl, combine the flour, baking powder and salt. In another bowl, combine bananas, yogurt and baking soda, set aside.
  • In a third bowl, combine the applesauce, sugar, oil and vanilla.
  • Using a wooden spoon, stir the banana mixture into the liquid mixture. Pour this mixture over the dry ingredients and mix until the dough is moist.
  • Gently fold in the chocolate chips.
  • Place the dough in a lightly oiled loaf pan. Sprinkle more chocolate chips on top.
  • Bake at 350 ° F for 50 to 60 minutes or until a toothpick inserted in the center of the bread comes out clean.
  • Remove the banana bread from the oven and let cool for 10 minutes.
  • Unmold the bread and let cool completely.
