Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ tsp. salt
- 3 large ripe bananas coarsely mashed
- ½ cup of plain coconut yogurt
- 1 teaspoon sodium bicarbonate
- ¼ cup of applesauce
- ¾ cup sugar
- ¼ cup vegetable oil
- 1 teaspoon vanilla
- 1 cup semi-sweet chocolate chips
Instructions
- In a large bowl, combine the flour, baking powder and salt. In another bowl, combine bananas, yogurt and baking soda, set aside.
- In a third bowl, combine the applesauce, sugar, oil and vanilla.
- Using a wooden spoon, stir the banana mixture into the liquid mixture. Pour this mixture over the dry ingredients and mix until the dough is moist.
- Gently fold in the chocolate chips.
- Place the dough in a lightly oiled loaf pan. Sprinkle more chocolate chips on top.
- Bake at 350 ° F for 50 to 60 minutes or until a toothpick inserted in the center of the bread comes out clean.
- Remove the banana bread from the oven and let cool for 10 minutes.
- Unmold the bread and let cool completely.
