Equipment

  • Baking sheet – For roasting the sweet potatoes.
  • Parchment paper (optional) – Makes cleanup easier and prevents sticking.
  • Large mixing bowl – To toss the salad ingredients together.
  • Small bowl or jar with lid – For whisking or shaking the dressing.
  • Saucepan with lid – For cooking the quinoa.
  • Cutting board – To chop sweet potatoes, kale, and basil.
  • Sharp chef’s knife – For cubing the potatoes and slicing the greens.
  • Measuring cups and spoons – For both the salad and dressing.
  • Wooden spoon or salad tongs – To toss everything togethe

Ingredients

  • 2 lbs sweet potatoes peeled and cubed
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 cup dry quinoa yields ~2 cups cooked
  • 2 cups kale chopped
  • cup dried cranberries
  • ¼ cup fresh basil sliced (optional)

Dressing:

  • 4 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup

Instructions

  • Preheat oven to 400°F (200°C). Line baking sheet.
  • Toss potatoes with oil, garlic powder, salt, and pepper. Roast 25–30 minutes, stirring once.
  • Cook quinoa according to package (1 cup quinoa + 2 cups water). Fluff with fork.
  • In a bowl, combine kale, cranberries, and basil.
  • Whisk dressing until smooth.
  • Add roasted potatoes and quinoa to the bowl. Pour dressing over top. Toss gently.
  • Serve warm, room temp, or chilled.

Notes

  • Rinse quinoa before cooking to remove bitterness.
  • Add chickpeas or feta for extra protein.
  • Great made a day ahead,  flavors intensify.
  • Swap kale with spinach if you prefer softer greens.
