Equipment

  • Wok or large skillet
  • Tofu press or heavy skillet
  • Mixing bowl
  • Spatula or wooden spoon

Ingredients

  • 1 14 oz block extra-firm tofu, cubed
  • 2 tablespoon canola oil divided
  • 2 cups sugar snap peas
  • 2 carrots thinly sliced
  • 1 bell pepper chopped
  • 3 tablespoon teriyaki sauce
  • 1 tablespoon garlic powder
  • 1 tablespoon ginger powder
  • 2 teaspoon sesame oil
  • 2 tablespoon toasted sesame seeds
  • Salt and pepper to taste

Instructions

  • Press the tofu if time allows, then cube it.
  • In a hot wok, add 1 tablespoon oil and fry tofu until golden on all sides, about 10 minutes. Remove and set aside.
  • Add remaining oil and stir-fry carrots, snap peas, and bell pepper for 5 minutes.
  • Mix teriyaki sauce, garlic powder, ginger powder, and sesame oil in a small bowl.
  • Return tofu to the pan, pour the sauce over everything, and cook 5 more minutes, stirring well.
  • Remove from heat, sprinkle sesame seeds, and serve over rice or noodles.

Notes

  • Time Saver: Use pre-cut stir fry veggie mix to speed things up.
  • Flavor Boost: Add a splash of rice vinegar or lime juice at the end.
  • Extra Crunch: Top with roasted cashews or crushed peanuts.
  • Meal Prep: Keeps well in the fridge for quick lunches all week.
