If your slow cooker could propose to you, this would be the meal it makes first. This Crockpot Marry Me Chicken Orzo is creamy, cozy, and loaded with that rich sun-dried tomato and Parmesan sauce that basically tastes like a restaurant snuck into your kitchen. Tender chunks of chicken, silky orzo, and wilted spinach all swimming together in a sauce so good you'll want to eat it with a spoon. And the best part? You do about 10 minutes of work and the slow cooker handles everything else.

Slow cooker filled with orzo pasta, chicken pieces, spinach, sun-dried tomatoes, and chopped fresh herbs on top.

Honestly, I make this one when company's coming and I want to look like I tried. Every single time, someone asks me for the recipe at the table and I just smile because I definitely did not spend all day cooking. Quick Answer

    • Total time: About 3.5 to 5.5 hours (mostly hands-off)
    • Flavor: Creamy, savory, garlicky, with a tangy pop from sun-dried tomatoes
    • Texture: Silky sauce, tender chicken, perfectly cooked orzo
    • Who it's for: Beginners, busy families, anyone who wants to look impressive without the effort
    • Method: Slow cooker, with orzo cooked separately for best results

This is a creamy slow cooker chicken dinner made with orzo, sun-dried tomatoes, spinach, and Parmesan sauce. It cooks low and slow while you go live your life.

    The ingredients

Assorted ingredients on a white surface including raw chicken, spinach, orzo pasta, cream, sun-dried tomatoes, parmesan cheese, olive oil, herbs, salt, pepper, onion, garlic, and parsley.

Chicken breasts - Boneless, skinless, cut into bite-sized pieces. Chicken thighs work great too if you want richer flavor (they're a bit more forgiving in the slow cooker).

Chicken stock - Low sodium is the move. The Parmesan adds plenty of salt on its own, trust me on this one.

Garlic - Fresh minced garlic, please. The jarred stuff works in a pinch but fresh really makes a difference here.

Italian seasoning - That classic blend of oregano, basil, and thyme does all the heavy lifting on flavor.

Red onion - Diced. It softens beautifully in the slow cooker and adds a little sweetness.

Sun-dried tomatoes - Drained and chopped. They give the sauce that deep, tangy, almost caramelized flavor that makes this dish what it is. Don't skip them.

Orzo pasta - Cooked separately on the stovetop. (More on why below. Short answer: mushy orzo is not it.)

Half and half - Or heavy cream if you want it extra indulgent. Both work.

Parmesan cheese - Shredded, not grated from a green can. Real Parmesan melts into the sauce and makes it glossy and rich.

Fresh spinach - Chopped. It wilts in literally one minute once you stir it in. You won't even know it's there, but it adds so much color and nutrition.

Salt and pepper - Season to taste at the end.

Fresh parsley - For garnish. Optional, but it makes everything look prettier.

Steps-by-step Instructions for the Marry Me Chicken Orzo

Step 1: Season and load the slow cooker Season your diced chicken with salt and pepper. Place it in the bottom of your 6-quart slow cooker in a single layer as much as possible.

Step 2: Add all the flavor Pour in the chicken stock. Add the garlic, Italian seasoning, diced red onion, and sun-dried tomatoes. Stir everything together so the chicken is coated.

Step 3: Cook low and slow Cover and cook on high for 2.5 to 3.5 hours, or on low for 4 to 5 hours. You want the chicken tender enough to break apart easily with a spoon.

Step 4: Cook the orzo separately About 20 minutes before the chicken is done, bring a pot of salted water to a boil. Cook the orzo until just al dente, about 8 to 10 minutes. Drain and set aside. Do not cook it in the slow cooker. See tips below for why this matters.

Step 5: Make it creamy Stir the half and half and shredded Parmesan directly into the slow cooker. Mix until the sauce comes together and looks smooth and glossy.

Step 6: Add the orzo and spinach Fold in the cooked orzo and chopped spinach. Stir for a minute or two until the spinach wilts completely.

Step 7: Taste and serve Adjust salt and pepper if needed. Garnish with fresh parsley and extra Parmesan. Serve hot right from the slow cooker.

Three side-by-side images show a crockpot meal in progress: raw chicken and ingredients, then cheese added, and finally fresh spinach and orzo on top.

    Sophie's Tips

    • Cook the orzo separately. I know it's one more pot to wash but it really does make a difference. Orzo cooked directly in the slow cooker turns to mush. Cooking it separately and adding it at the end keeps the texture perfect. Worth it every time.
    • Sauce too thick? Add a splash of chicken stock or cream and stir. It loosens right up.
    • Sauce too thin? Let it sit uncovered on low for 10 to 15 extra minutes, or stir in a little more Parmesan. It will tighten up.
    • Don't open the lid while it's cooking. Every time you lift it, you add about 20 to 30 minutes to the cooking time. Just leave it alone!
    • Add the cream and cheese at the very end. If you add dairy too early it can separate. Wait until the chicken is done.
    • The sun-dried tomato oil. Some recipes tell you to drain and discard the oil from the jar. I like to add just a small spoonful of it in with the tomatoes. It adds incredible flavor. Totally optional but very worth it.

    Troubleshooting

    ProblemFix
Sauce is too thinCook uncovered 10 min on low, or add more Parmesan
Sauce is too thickAdd a splash of stock or cream
Orzo is mushyYou cooked it in the slow cooker. Next time, keep it separate
Chicken is dryYou may have overcooked it. Try low for 4 hours instead of 5
Too saltyUse low-sodium stock next time. Add a squeeze of lemon to balance

    Variations

    • Variations
    • Chicken thighs - Use boneless skinless thighs instead of breasts for extra rich, juicy results. They're harder to overcook, which is a win for beginners. Same cook time applies.
    • Make it a soup - Want something a little lighter and brothier? Add 4 extra cup of chicken stock at the beginning. The sauce stays creamy but thinner, more like a cozy soup. Perfect for cold nights. Serve it with crusty bread for dipping.
    • Lighter version - Swap the half and half for whole milk plus a couple spoonfuls of plain Greek yogurt. Still creamy, with a little extra protein.
    • Keto - Skip the orzo entirely and serve the creamy chicken over zucchini noodles or cauliflower rice instead.
    • Baked casserole version - Once the chicken and sauce are done, mix with cooked orzo in a baking dish, top with shredded mozzarella, and bake at 375F until bubbly and golden. This is your "Marry Me Chicken Orzo Bake."
    • Make it vegetarian - Swap the chicken for a can of drained chickpeas and add extra spinach or mushrooms. Use vegetable stock.
    • Gluten-free - Use gluten-free orzo or substitute with arborio rice. Adjust cooking time as needed.

    Serving Ideas

    • This dish is really a full meal on its own, but here's what pairs really nicely:
    • Crusty garlic bread or focaccia to mop up every drop of that sauce
    • Simple arugula salad with lemon vinaigrette for something fresh alongside it
    • Roasted broccoli, asparagus, or zucchini
    • A glass of white wine if you're feeling fancy (the dish already deserves it)

    Storage Tips

Fridge: Store leftovers in an airtight container for up to 4 days. The orzo will absorb some sauce as it sits, so add a splash of stock or cream when reheating.

Reheat: Warm slowly on the stovetop over medium-low heat, stirring gently. Add liquid as needed. The microwave works in a pinch, just go in 60-second intervals and stir in between.

Freezer: You can freeze the creamy chicken portion (without the orzo) for up to 2 months. The orzo gets grainy when frozen and thawed. Thaw overnight in the fridge and cook fresh orzo to serve with it.

Meal prep tip: If you know you're making this for lunches all week, consider storing the orzo and the chicken separately in the fridge. They'll both last better that way.

    FAQ

Can I cook the orzo directly in the slow cooker?

Technically yes, but I don't recommend it. Orzo in a slow cooker turns mushy and gluey really fast. If you do want to try it, add the dry orzo in the last 30 to 45 minutes on low with an extra cup of stock. Check it often. But honestly? Just boil it separately. It takes 8 minutes and the texture is so much better.

    Can I double this recipe?

Yes! Just make sure your slow cooker is big enough. For a doubled batch, you'll want at least an 8-quart slow cooker. The cook time stays roughly the same, maybe add 30 minutes on the high setting to be safe. The orzo quantity doubles too, so have a large pot ready.

Why is it called "Marry Me Chicken"?

The original Marry Me Chicken recipe went viral on social media because, according to legend, it's so delicious that whoever you make it for will immediately propose. Whether or not that's true is between you and your dinner guest. But the name stuck, and for good reason. This version adds orzo and the slow cooker does all the work. So you get a proposal-worthy meal with zero effort.

    Can I use frozen chicken?

It's really best to thaw it first. Frozen chicken releases extra liquid as it cooks in the slow cooker, which dilutes the sauce and messes with the cooking time. Give it a night in the fridge to thaw and you'll get much better results.

How long does it take to cook orzo in the slow cooker?

If you add dry orzo directly to the slow cooker, it needs about 30 to 45 minutes on low with extra stock. But honestly, the texture is never as good that way. The easiest and most reliable method is boiling it separately for 8 to 10 minutes on the stovetop, then stirring it in at the end. You get perfect orzo every single time with zero guessing.

    Equipment

    • 6-quart slow cooker
    • Cutting board + knife
    • Medium pot for orzo
    • Colander
    • Measuring cups and spoons
    • Wooden spoon or spatula

    Ingredients

    • 3 boneless skinless chicken breasts cut into bite-sized pieces
    • ¾ cup chicken stock low sodium
    • 2 garlic cloves minced
    • 1 tablespoon Italian seasoning
    • 1 red onion diced
    • ½ cup sun-dried tomatoes drained and chopped
    • 1½ cups orzo pasta
    • 1 cup half and half or heavy cream
    • ½ cup Parmesan cheese shredded
    • 2 cups fresh spinach chopped
    • Salt and pepper to taste
    • Fresh parsley chopped, for garnish

    Instructions

    • Pat your chicken dry and cut it into bite-sized pieces. Season all over with salt and pepper. Place in the bottom of a 6-quart slow cooker.
    • Pour in the chicken stock. Scatter the minced garlic, Italian seasoning, diced red onion, and chopped sun-dried tomatoes over the chicken. Stir to coat everything evenly.
    • Cover with the lid and cook on high for 2.5 to 3.5 hours, or on low for 4 to 5 hours. The chicken is ready when it pulls apart easily.
    • About 20 minutes before the chicken finishes cooking, bring a medium pot of salted water to a boil. Add the orzo and cook for 8 to 10 minutes until al dente. Drain and set aside.
    • Once the chicken is done, stir the half and half and shredded Parmesan into the slow cooker. Keep stirring until the sauce is smooth and creamy.
    • Add the drained orzo and chopped spinach. Fold everything together and let it sit for 1 to 2 minutes, stirring until the spinach is fully wilted.
    • Taste and adjust the seasoning with salt and pepper as needed. Serve hot with fresh parsley and extra Parmesan on top.

    Notes

    • Always use low-sodium stock. The Parmesan is already salty and you want control over the final seasoning.
    • Sauce too thick after sitting? A splash of warm stock or cream and a good stir brings it right back to life.
    • Want even more flavor? Stir one small spoonful of the oil from the sun-dried tomato jar into the slow cooker along with the tomatoes. It's a small thing that makes a big difference.
    • This is a great make-ahead dinner. Keep the orzo stored separately from the chicken if you're prepping for the week. Both will stay fresh for up to 4 days in the fridge.
