    The ingredients

    • Shredded Cooked Chicken: Use rotisserie chicken for convenience, or make your own shredded chicken by boiling or roasting chicken breasts.
    • Potato Gnocchi: Find these in the pasta aisle or refrigerated section of your grocery store. For a gluten-free version, look for gluten-free gnocchi.
    • Half and Half: This adds the perfect amount of creaminess. For a lighter option, you can use whole milk, though the soup may be slightly less rich.
    • Kale: Swap with spinach if you prefer a milder green. Both work beautifully in this soup.
    • Low-Sodium Chicken Broth: Opt for low-sodium broth to control the saltiness of the dish.

Tips for the Best Creamy Chicken Gnocchi Soup

Reheat Gently: Reheat leftovers on low heat to prevent the creamy broth from separating.

Don't Overcook the Gnocchi: Keep an eye on the gnocchi as it cooks. It's ready when it floats to the top, which usually takes just a few minutes.

Use Fresh Vegetables: Freshly diced carrots, celery, and onions add a burst of flavor and texture to the soup.

Make It Thicker: If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of water, then stir it into the soup before adding the kale.

    Variations of the Recipe

    • Vegetarian Option: Skip the chicken and use vegetable broth. Add more vegetables like mushrooms, zucchini, or bell peppers for a hearty, plant-based soup.
    • Spicy Kick: Add a pinch of red pepper flakes or a dash of hot sauce for some heat.
    • Dairy-Free: Use coconut milk or unsweetened almond milk as a substitute for half and half. The flavor will differ slightly but will still be delicious.
    • Protein Boost: Stir in cooked sausage, pancetta, or bacon for added protein and flavor.

What to Serve With Creamy Chicken Gnocchi Soup

    • Crusty Bread: A loaf of crusty French bread or a side of garlic bread is perfect for dipping.
    • Salad: A light, refreshing salad, such as a simple arugula salad with lemon vinaigrette, complements the rich flavors of the soup.
    • Roasted Vegetables: Oven-roasted vegetables like Brussels sprouts or asparagus add a nice balance to the meal.
Two bowls of creamy soup with gnocchi, shredded chicken, kale, and diced carrots on a white surface, with a bowl of uncooked gnocchi and wooden salt cellar nearby.

    FAQ

Can I substitute kale with another green?

Yes, spinach, Swiss chard, or even arugula can be used as substitutes for kale.

    Can I use homemade gnocchi?

Absolutely! Homemade gnocchi will elevate the dish, though it may require additional preparation time

    Can I use frozen vegetables?

Yes, frozen diced carrots and celery can be used for convenience. Add them directly to the pot during the sautéing step.

    Equipment

    • Large pot or Dutch oven
    • Wooden spoon
    • Cutting board and sharp knife
    • Ladle

    Ingredients

    • 1 tablespoon olive oil
    • 2 stalks of celery chopped
    • 2 carrots diced into small cubes
    • 1 medium white onion diced
    • 2 teaspoons minced garlic
    • 2 cups shredded cooked chicken
    • 6 cups low-sodium chicken broth
    • 1 teaspoon dried oregano
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 1 package 16 ounces potato gnocchi
    • 1 cup half and half
    • 1 cup fresh kale roughly chopped

    Instructions

    • Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the chopped celery, carrots, and onion. Sauté for 5 minutes until the vegetables begin to soften and the onions turn translucent.
    • Stir in the minced garlic and cook for another minute until fragrant. Add the dried oregano, salt, and pepper, mixing well to coat the vegetables.
    • Pour in the chicken broth and add the shredded cooked chicken. Bring the mixture to a gentle boil over medium-high heat.
    • Reduce the heat to medium and add the potato gnocchi to the pot. Let it simmer for 4-5 minutes until the gnocchi float to the surface and are tender.
    • Stir in the half and half, allowing the soup to become creamy and luscious. Add the chopped kale and let it wilt for about 2 minutes.
    • Taste the soup and adjust the seasoning if needed. Ladle into bowls and serve hot. Enjoy this comforting dish with a side of crusty bread or a fresh salad.

    Notes

    Storage Instructions

    • Refrigerate: Store leftover soup in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave, stirring occasionally.

    • Freeze: This soup can be frozen, but it's best to freeze it without the gnocchi and cream, as they can change texture when thawed. Add these fresh when reheating.
