Fall Veggies You Can Meal Prep on Sunday

There's something comforting about opening the fridge on a chilly fall Monday and finding a lineup of ready-to-go veggie sides waiting for you. The truth is, not every vegetable holds up well after a few days in the fridge, but some fall favorites actually get better when they've had a chance to sit, soak in their seasonings, and reheat beautifully.

If you're planning a Sunday meal prep session, these are the veggies I recommend roasting, air frying, or glazing ahead of time. Each one is cozy, colorful, and perfect for quick weeknight meals or packed lunches.

    Sweet Potatoes

Sweet potatoes are basically the king of fall meal prep. They hold their shape, taste even better reheated, and can be used in everything from grain bowls to tacos.

Try these Air Fryer Sweet Potato Wedges for crispy edges that stay tasty even after a second round in the oven or microwave. Bonus: they're a healthy swap for fries when you're craving something crunchy.

    Beets

If you haven't tried roasted beets for meal prep, you're missing out. They stay firm, hold their earthy sweetness, and are amazing in salads or grain bowls. Plus, they add that deep jewel-toned pop of color to your meals.

    Carrots

Glazed carrots are a weeknight lifesaver. They reheat beautifully and keep their sweetness without getting mushy. Pair them with roasted chicken, toss them into a grain salad, or just reheat for a quick veggie side.

Make a batch of Brown Sugar Honey Glazed Carrots on Sunday, and you'll thank yourself midweek when dinner feels like it's already halfway done.

    Brussels Sprouts

Brussels sprouts are a cold-weather classic that taste amazing when roasted. They crisp up in the oven and reheat well in a skillet or the air fryer. Toss them with balsamic glaze or Parmesan, and you've got a veggie side that feels restaurant-worthy.

    Acorn Squash

Acorn squash is one of those vegetables that feels fancy, even though it's ridiculously easy to prepare. Roasting brings out its natural sweetness, and the leftovers are perfect for tossing into salads, soups, or grain bowls.

This Roasted Acorn Squash in the Air Fryer is simple to make and stays delicious when reheated.

    Cauliflower

Cauliflower is the ultimate blank canvas. Roast it with curry spices, toss it in buffalo sauce, or keep it simple with olive oil and garlic. It's sturdy enough to handle reheating and works in grain bowls, soups, or tacos.

    Broccolini

Broccolini is delicate but surprisingly meal-prep friendly. The trick is roasting or air frying it until tender-crisp. When you reheat it, it keeps that satisfying bite instead of turning limp.

My go-to? Air Fryer Broccolini. It's quick, flavorful, and works with just about any main dish.

The broccolini comes out perfectly crispy on the outside and tender on the inside, with a delicious hint of lemon zest and onion.

Meal prepping fall veggies doesn't have to mean boring or soggy leftovers. With a little Sunday effort, you'll have a fridge full of sides that taste just as good on Wednesday as they did fresh out of the oven. Sweet potatoes, carrots, broccolini, acorn squash, and green beans are my top picks for the season, and each one comes with an easy recipe to get you started.

Your future weekday self is going to be very, very grateful.
