Ingredients

  • 4 cups cantaloupe cubes
  • 2 small cucumbers sliced
  • ½ cup crumbled feta
  • 2 tablespoons fresh mint chopped
  • 1 green onion thinly sliced
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Cut the cantaloupe in half and remove the seeds. Peel off the rind and cut the melon into bite-size cubes.
  • Slice the cucumbers into thin rounds.
  • Place the melon cubes, cucumber slices, chopped mint, and green onion in a large mixing bowl.
  • Sprinkle the crumbled feta over the top.
  • In a small bowl combine lime juice and olive oil.
  • Pour the dressing over the salad and season with salt and pepper.
  • Gently toss until everything is evenly coated.
  • Serve immediately or chill briefly before serving.

Notes

Use a ripe cantaloupe for the best flavor.
Cut melon pieces slightly larger to prevent the salad from becoming watery.
Add feta just before serving to keep the texture creamy and fresh.
If the salad releases liquid after chilling, drain excess juice before serving.
