Easy One Pot Cauliflower Chickpea Curry

- 1 tablespoon olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 tablespoon fresh ginger minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1 teaspoon Salt
- 4 cups cauliflower florets
- 1 can 15 oz chickpeas
- 1 can 28 oz crushed tomatoes
- 1 can 14 oz full fat coconut milk
- ¼ cup fresh coriander chopped chopped
Warm olive oil in a large skillet over medium heat.
Add the onion and cook 4–5 minutes until softened.
Stir in garlic and ginger, cooking 1–2 minutes.
Mix in curry powder, cumin, paprika, and salt; cook 2–3 minutes to toast the spices.
Toss in the cauliflower and cook 5 minutes to soften.
Add chickpeas, tomatoes, and coconut milk. Stir to combine.
Cover and simmer on medium-low for 15–20 minutes, stirring now and then.
Turn off the heat, stir in fresh coriander, and serve hot with rice or naan.
