Equipment

  • Large nonstick skillet or wok
  • Cutting board
  • Sharp knife
  • Small mixing bowl
  • Measuring spoons
  • Wooden spoon or spatula
  • Tofu press or clean kitchen towel (optional but helpful)

Ingredients

  • 2 tablespoons olive oil divided
  • 1 block 450g extra firm tofu, cubed
  • 3 cups chopped kale
  • 1 bell pepper cubed
  • 1 onion chopped
  • 1 pint white mushrooms sliced
  • Salt and pepper to taste

For the Sauce:

  • ¼ cup tamari
  • 2 tablespoons maple syrup or 1 tablespoon brown sugar
  • 1 teaspoon fresh ginger chopped
  • 1 teaspoon sambal oelek
  • 1 teaspoon toasted sesame oil
  • ¼ cup water
  • 1 teaspoon cornstarch

Garnish (optional):

  • Toasted sesame seeds green onions

Instructions

  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the bell pepper, onion, and mushrooms. Cook for about 10 minutes, until the onion is soft and golden. Remove and set aside.
  • Add the remaining olive oil to the skillet. Add tofu cubes and cook each side until golden and crisp, about 12 to 15 minutes. Season with salt and pepper.
  • In a small bowl, whisk together all sauce ingredients until smooth.
  • Return cooked veggies to the skillet with the tofu. Pour in the sauce and stir well. Cook for 3 to 5 minutes until the sauce thickens.
  • Add chopped kale and cook for 2 more minutes, just until wilted. Serve hot, topped with optional garnishes.

Notes

  • Press your tofu for best texture. It really helps it get nice and crispy.
  • This stir fry is great for using up veggie odds and ends — don’t overthink it!
  • If you're meal prepping, keep the rice separate to avoid sogginess.
  • Want it extra saucy? Just double the sauce ingredients — I do it all the time
