The ingredients

- Boneless chicken thighs or breasts - thighs are juicier, but breasts work great too
- Plain Greek yogurt - forms the base of the marinade and keeps the chicken tender
- Lemon juice & red wine vinegar - brightens up everything
- Olive oil - helps carry those flavors into the meat
- Garlic & oregano - classic Greek seasoning
- Salt + pepper - don't skip it
- Cherry tomatoes, cucumber, shallot - fresh, crunchy, colorful
- Kalamata olives & feta - salty + creamy combo heaven
- Tzatziki sauce - store-bought or homemade (if you've got time)
- Cooked white or brown rice - or sub in quinoa or cauliflower rice
- Fresh parsley - that final hit of herby freshness

How to prepare the chicken gyro bowl
Marinate the chicken. In a large bowl, whisk together the yogurt, lemon juice, vinegar, garlic, oil, oregano, salt and pepper.
Coat the chicken. Toss the cubed chicken into the marinade and stir to coat. Cover and chill in the fridge for at least an hour.
Bake it. Preheat your oven to 400ยฐF. Spread the marinated chicken on a baking sheet and roast for 20 minutes, flipping once, until golden and fully cooked.
Chop the veggies. While the chicken's roasting, dice up your tomatoes, cucumber, shallots, and olives.
Prep your bowls. Add a scoop of rice to each bowl. Top with the hot chicken, your chopped veggies, feta, and a generous spoonful of tzatziki.
Garnish. Sprinkle on fresh parsley and maybe a little extra oregano. Serve with pita wedges if you're feelin' it.

Tips for Success
- Let the chicken marinate as long as possible (overnight is best).
- Use a hot oven or even broil at the end to get crispy edges.
- Warm your pita before serving, makes it taste restaurant-level.
- Add a little lemon zest over the finished bowl for extra zing.
Variations
- Low-carb? Swap rice for cauliflower rice or salad greens.
- No oven? Use a grill pan or stovetop skillet for that char.
- Meal prep? Store the components separately and assemble fresh.
Serving Ideas
- Pair with warm pita or naan.
- Add hummus or baba ganoush on the side.
- Turn it into a wrap or gyro if you've got flatbread.
Storage Tips
- Chicken: Store in an airtight container up to 4 days.
- Rice & veggies: 3-4 days, stored separately for best texture.
- Tzatziki: Up to 5 days refrigerated (if homemade).
- Avoid freezing, the yogurt marinade doesn't hold up well.
