    The ingredients

Assorted ingredients on a white surface, including snap peas, tofu cubes, carrots, yellow bell pepper, seasonings, soy sauce, oil, and small bowls of pepper and salt.

Extra-firm tofu - The firmer, the better. You want it to hold its shape and crisp up nicely.

Canola oil - A neutral oil that can take the heat for high-temp stir-frying.

Sugar snap peas - Add crunch and a hint of sweetness.

Carrots - Thinly sliced for that tender bite and gorgeous color.

Bell pepper - Any color works! Adds a juicy bite and more vitamin C than an orange.

Teriyaki sauce - Store-bought or homemade, this is your flavor bomb.

Garlic powder + Ginger powder - Shortcut seasonings that still pack big flavor.

Sesame oil - A little drizzle goes a long way.

Toasted sesame seeds - That finishing touch that makes you feel like a pro.

Salt and pepper - To taste, always!

Step-by-Step Instructions for the Teriyaki Tofu Stir fry

Press and cube the tofu. If you have time, press your tofu with a paper towel and a heavy skillet for 10-15 minutes to remove extra moisture. Then cut it into 1-inch cubes.

Heat oil and crisp up the tofu. Add 1 tablespoon oil to a wok over medium-high heat. Let it get hot. Add the tofu cubes and cook for about 10 minutes, flipping occasionally, until golden brown on all sides. Remove and set aside.

Sauté the veggies. Add remaining oil to the wok. Toss in carrots, snap peas, and bell peppers. Cook for 5 minutes, stirring so nothing burns and everything gets slightly tender but still crisp.

Mix up the sauce. In a small bowl, combine teriyaki sauce, garlic powder, ginger powder, and sesame oil. Stir until smooth and ready to pour.

Combine and cook. Add the crispy tofu back into the wok with the veggies. Pour the sauce over everything. Toss to coat and cook for another 5 minutes so the flavors can really soak in.

Finish and serve. Turn off the heat. Sprinkle with toasted sesame seeds. Serve over rice or noodles, and enjoy the moment of zen that is this meal.

Three panels show: whisking sauce in a bowl, stir-frying tofu cubes in a pan, and adding vegetables and sauce to the pan with the tofu.

    Tips for Success

    • Don't skip pressing the tofu. Even a quick press helps it crisp up better.
    • Use a hot pan. Let the wok get nice and hot before adding tofu or veggies for that signature stir-fry sizzle.
    • Veggie flexibility. Got broccoli, mushrooms, or baby corn? Toss 'em in!
    • Batch cook rice. Make a big batch earlier in the week so dinner comes together lightning fast.

    Variations

    • Spicy kick: Add a squirt of sriracha or chili flakes to the sauce.
    • Sweet touch: Stir in a teaspoon of maple syrup if your teriyaki sauce is on the salty side.
    • Low-carb version: Serve over cauliflower rice or just eat it as-is.
    • Protein swap: Try crispy chickpeas, tempeh, or seitan if tofu's not your thing.

    Serving Ideas

    • Over jasmine or brown rice
    • With lo mein or soba noodles
    • Tucked into lettuce wraps for a crunchy twist
    • Paired with miso soup or a quick seaweed salad

    Storage Tips

    • Fridge: Store leftovers in an airtight container for up to 4 days.
    • Reheat: Microwave or reheat in a pan with a splash of water to revive the sauce.
    • Freezer: Not ideal, the veggies texture changes a lot once frozen and thawed.

    FAQs

Can I use frozen vegetables instead of fresh?

Totally! Just thaw and pat them dry first to avoid excess water in the pan.

    Is homemade teriyaki sauce better?

If you've got a few extra minutes, go for it. Otherwise, store-bought works just fine here.

How do I make tofu extra crispy?

Coat it in a bit of cornstarch before frying! It makes a huge difference.

The tofu turned out perfectly golden and crisp, and the teriyaki sauce coated the veggies so well. I love that it’s packed with color and crunch but still comes together quickl
