It's made with whatever you've got lying around, a little beef, some broth, a few frozen veggies, and a handful of pasta. Somehow, it all comes together into the coziest, most satisfying bowl of soup. It tastes like something your grandma would've made after checking the pantry and saying, "Yep, this'll do."

    This is a recipe I pull out when I'm low on time and even lower on motivation. It's cheap, it's fast, and everyone in the house eats it without complaint, which, let's be real, is kind of a miracle.     The Ingredients

    Step-by-Step Instructions for the Poor Man's Soup

    1. Cook the beef.
    Heat a splash of oil in a big soup pot over medium-high. Add the ground beef, diced onion, and minced garlic. Let it all sizzle and cook until the meat's browned and the onions have softened up - about 8-10 minutes. Give it a stir every now and then so nothing sticks.

    2. Build the flavor.
    Now pour in the beef broth, dump in the canned tomatoes (juice and all), add Worcestershire, oregano, cumin, and your chopped bell pepper. Bring the whole thing to a gentle boil. Once it's bubbling, lower the heat and let it simmer for 10 minutes. Your kitchen's gonna smell amazing.

    3. Toss in the pasta.
    Add your macaroni and stir well. Let it cook for about 5 minutes - just until it starts to get tender. Don't overdo it unless you like your pasta a little mushy (hey, no judgment).

    4. Add the veggies.
    Last step: toss in your frozen corn and peas. Let those warm through - about 2 minutes is all you need.

    5. Taste and serve.
    Grab a spoon, give it a taste, and adjust with salt and pepper. Then ladle into bowls and serve hot. Bonus points if you've got some crusty bread for dunking.

    • Want to cut down on fat? Use lean ground beef or even ground turkey.

    FAQs

    Can I make this in the slow cooker?

    Totally. Just brown the meat and onions first, then throw everything (except pasta and frozen veggies) into your slow cooker and cook on low for 4-5 hours. Stir in the pasta and frozen veggies in the last 30 minutes.

    Can I make it without beef?

    Yup! Use ground turkey, lentils, or even just load it up with beans. It'll still be filling and flavorful.

    Why is it called "Poor Man's Soup"?

    It's one of those old-school recipes made from basic, budget-friendly ingredients, stuff most people already have on hand. It stretches a little meat and a few veggies into a full meal that feeds a crowd.
