    Steps-by-step Instructions for the Mango Corn Salsa

    The lime zest is non-negotiable. I know it feels like an extra step but it takes 30 seconds and it makes a real difference. The zest has the actual lime oils in it. The juice is just acidic. You need both.

    Don't skip draining the corn. I made this once with still-frozen corn kernels and ended up with a watery puddle at the bottom of my bowl. Thaw it fully and drain it. You'll thank me later.

    Overripe mango? If your mango is a little too soft, it'll still work. Just dice it carefully and fold it in gently at the end so it doesn't break down into mush. It'll be more of a chunky mango situation but still delicious.

    Make it ahead. This salsa actually gets better after sitting for an hour or two. The lime soaks in and everything melds together. Perfect for parties. Just wait to add the cilantro until right before serving if you're prepping way ahead.
