    There's nothing quite like a big bowl of creamy veggie soup on a busy weeknight. This Asparagus and Broccoli Soup is one of my go-to recipes when I want something that feels cozy and homemade without spending an hour in the kitchen.

    • Asparagus: Fresh asparagus works best here. Look for firm stalks with tight tips. Even off-season asparagus holds up really well once it's blended into the soup.
    • Broccoli: Fresh florets give the most flavor, but frozen broccoli works perfectly too. It melts right into the soup and no one will ever know the difference.
    • Onion + Garlic: These two are your flavor base. Don't skip them. They're what make the whole pot smell amazing while it's cooking.
    • Vegetable Broth: Low sodium is my go-to so I can control the salt. Chicken broth works just as well if you're not keeping it vegetarian.
    • Pesto: This is the secret ingredient that takes this broccoli asparagus soup from good to really good. Store-bought is totally fine. Stir some in at the end or swirl it on top for serving.
    • Heavy Cream: This is what makes the soup thick, velvety, and creamy. Want a lighter version? Half and half or full-fat coconut milk both work great.
    • Olive Oil, Salt, Pepper: Simple, but they tie everything together. Always taste and adjust after blending.

    Step-by-Step Instructions for the Asparagus and Broccoli Soup

    1. Prep your veggies
    Trim the asparagus ends and chop into small pieces. Chop the onion, garlic, and broccoli florets.

    2. Sautรฉ the aromatics
    Warm olive oil in a Dutch oven. Add onion and cook until soft. Stir in garlic for a minute.

    3. Add the veggies
    Toss in asparagus and broccoli. Let them sautรฉ a couple minutes for flavor.

    4. Pour in the broth and simmer
    Add enough broth to cover the veggies. Bring to a boil, then simmer until everything is tender.

    5. Blend until creamy
    Use an immersion blender right in the pot. Blend fully or leave it slightly chunky if you like more texture.

    6. Add cream
    Stir in heavy cream. Taste and adjust salt and pepper.

    Garnish with extra pesto or a splash of cream. Serve warm.

    • Let the soup cool slightly before blending if using a countertop blender.
    • Add more broth if the soup becomes too thick after blending.
    • Always taste after blending. Veggie soups often need more salt at the end.

    Yes, and honestly it tastes even better the next day! The flavors have more time to come together. Just store it in an airtight container in the fridge for up to 4 days and reheat gently on the stovetop.

    Absolutely. Just freeze it before adding the cream. When you're ready to eat, reheat it on the stove and stir the cream in at the end. It stays smooth and creamy that way.

    • 3 cups asparagus trimmed
