These Roast Beef Sliders got that cozy deli-shop smell, the gooey Swiss cheese pull, and the little kick from the horseradish mayo that honestly makes me smile every time. The crispy onions melt right into the cheese and give the whole thing a crunchy surprise.

Nine small sandwiches with layers of meat and cheese are arranged on a wooden board, garnished with chopped herbs. Salt and pepper containers are in the background.

These sliders pair so well with a fresh salad. If you have roast beef left try my Roast Beef salad, And if you love easy party-style recipes, my Hawaiian Roll Garlic Cheese Bread always gets devoured first.

    The ingredients

Ingredients for sandwiches arranged on a white surface, including slider rolls, roast beef, shredded cheese, mayonnaise, fried onions, minced garlic, salt, and pepper.

    Horseradish Mayo

    • Mayonnaise
Makes everything creamy and ties the slider filling together.
    • Prepared horseradish
Adds heat and brightness. Start small, add more if you like spicy things.
    • Salt and pepper
Just enough to balance the sauce.

    Beef Sliders

    • Mini slider buns
Any soft buns work. Hawaiian-style rolls stay the softest.
    • Cooked roast beef
Shredded or chopped. Deli slices are fine too.
    • Swiss cheese
Mild, melty, and perfect with horseradish.
    • Crispy onions
Little pockets of crunch. Don't skip them.

Steps-by-step Instructions for the Roast Beef Sliders

    1. Make the horseradish mayo

Stir together the mayo, horseradish, salt, and pepper.
Taste and add more horseradish if you want extra kick.
    Set it aside.

    2. Prep the slider buns

    Preheat your oven to 350ยฐF.
Slice the buns horizontally, keeping them connected like a sheet.
Place the bottom layer in a baking dish.

    3. Layer the roast beef

    Spread the horseradish mayo evenly.
Scatter the roast beef over the buns.

    4. Add cheese and onions

Sprinkle the Swiss cheese all over the top.
Add the crispy onions for texture.

    5. Add the top buns

Place the top half back on gently.

    6. Bake

Bake for 10 minutes or until the cheese is nice and melty.

    7. Serve warm

Slice into individual sliders and serve right away.

A metal whisk in a glass bowl containing a creamy, seasoned mixture, placed on a white marble surface.
A slice of bread topped with layers of roast beef and a generous amount of shredded cheese on a light surface.
Twelve slider sandwiches with golden-brown buns and visible melted cheese are arranged in a rectangular formation on a light surface.

    Sophie Tips

    • If you want a golden glossy top, brush a bit of butter on the buns before baking.
    • Add a few pickles on top of the roast beef for extra tang.
    • If your roast beef is thick, warm it up slightly before layering so the sliders bake evenly.
    • I always double this recipe because apparently sliders disappear faster than air in my house.

    Variations

    • Swap Swiss for provolone or cheddar for a cheesier vibe.
    • Add caramelized onions instead of crispy ones for a softer bite.
    • Stir a little Dijon into the horseradish mayo if you love more punch.
    • Use turkey or ham instead of roast beef. Still delicious.

    Serving Ideas

    • Serve with a bowl of tomato soup.
    • Add a simple green salad to balance the richness.
    • These make a great game-day snack or weeknight dinner.

    Storage Tips

You can freeze them, but the crispy onions lose their crunch. Still tasty though.

Store leftovers in the fridge for up to 3 days.

Reheat at 325ยฐF for about 10 minutes so the bread stays soft.

    FAQ

Can I make these ahead of time?

Yes, prep everything except the baking. Add the crispy onions right before the oven so they stay crunchy.

How do I keep the sliders from getting soggy?

Spread the mayo thinly and bake uncovered so the buns warm through without steaming.

These roast beef sliders are one of my go-tos for game day. I swear every time I set the tray down, they vanish before I even grab my own plate.
