    This Tuscan Bean Salad is crunchy, briny, a little sweet, a little tangy, and somehow tastes like it took way more effort than it did.

    The Ingredients

    Chickpeas: Creamy, sturdy, and they don't fall apart when you toss everything.

    Kidney beans: Adds color and makes it feel extra hearty. (Also, great for the "protein bean salad" vibe.)

    Bell peppers (any color): Crunch factor. I like red + yellow for the happy vibes.

    Cucumber: Fresh and crisp. English cucumber is easiest, but mini cucumbers work too.

    Tomatoes or cherry tomatoes: Juicy, sweet, and they make the dressing taste more "summer."

    Kalamata olives: Salty, briny, and totally worth it.

    Green onion: Milder than red onion, still gives that bite.

    Fresh herbs (basil, parsley, or both): Basil makes it feel more "Tuscan," parsley keeps it bright.

    Olive oil: Use one you actually like the taste of.

    Maple syrup: Tiny sweetness to balance the acid.

    Dijon mustard: Helps the dressing cling to everything.

    Lime juice or lemon juice: Either works. Lime feels extra fresh.

    Dried oregano: Classic Mediterranean energy.

    Salt + black pepper: Taste at the end. Beans need seasoning.

    How to make the Tuscan Bean Salad

    Rinse the chickpeas and kidney beans really well, then let them drain. (Less "bean can" flavor, more clean and fresh.)

    Chop the peppers, cucumber, tomatoes, olives, and green onion into bite-size pieces.

    Combine all the salad ingredients in a big bowl.

    Whisk the dressing in a small bowl or jar until it looks smooth and a little creamy (that's the Dijon doing its thing).

    Toss the salad with the dressing until everything is glossy and coated.

    Chill for 30 minutes if you can. If you can't… it's still good. But after chilling, it gets kind of addictive.

    Sophie Tips

    • I tested this dressing with lemon and with lime. Lime is my favorite here. It tastes brighter, and with maple it's just… chef's kiss (but like, my weeknight version of that).
    • Don't skip the chill time if you're meal prepping. The flavor settles down and gets way more "together."
    • If your tomatoes are super juicy, scoop out some of the watery seeds before dicing. Otherwise the salad gets a little puddly by day two. Learned that one the annoying way.
    • Taste at the end. Beans are blank. Dressing is bossy. Salt is the referee.

    Troubleshooting

    My salad got watery. Why?

    • Cucumber + tomatoes are usually the culprits.
    • Fix: blot cucumber with paper towel after chopping, and use cherry tomatoes (they leak less).

    It tastes bland after chilling.

    Totally normal. Cold food tastes less salty.

    • Fix: add a pinch of salt, a squeeze of citrus, or a tiny drizzle of olive oil right before serving.

    The dressing tastes too sharp.

    • Fix: add a little more maple syrup (start small), or another spoon of olive oil.

    My beans are getting mushy.

    • Fix: rinse gently, don't over-stir, and use beans that are firm (some brands are softer than others).

    Variations

    • Tuscan white bean salad version: swap chickpeas + kidney beans for cannellini beans (white kidney beans).
    • Costco-style vibe: add cooked barley and a pesto-ish dressing twist (or just toss in chopped basil + a spoon of pesto).
    • More protein: add tuna, diced chicken, or a scoop of cooked quinoa.
    • Creamy version: add a spoon of Greek yogurt to the dressing (just enough to make it lightly creamy).
    • Cheesy: feta or mini bocconcini turns it into a potluck superstar.

    Serving Ideas

    • With grilled chicken, salmon, or burgers as a bright side dish
    • Scooped with pita chips like a chunky bean dip
    • Stuffed into wraps with greens and hummus

    • Store in an airtight container in the fridge for up to 4 days.
    • For best texture: if you're making it ahead, keep the cucumber slightly bigger chunks.
    • I don't freeze this. Frozen cucumber is… not it.

    FAQs

    Is this the Costco Tuscan bean salad?

    Not exactly. The Costco-style versions usually include barley and often a pesto-style dressing.
    This one is a simpler tuscan bean salad recipe you can throw together fast, no cooking, still big flavor. If you want the Costco vibe, add cooked barley and basil.

    What beans have the most protein for a high protein bean salad?

    If you're building a high protein bean salad, black beans, kidney beans, navy beans, and chickpeas are common go-tos.
    I like chickpeas + kidney beans here because you get sturdy texture plus that hearty bite.

    Can I use dried beans instead of canned?

    Yes. Cook them until just tender (not falling apart), cool completely, then use them like canned. The main thing is texture. Overcooked beans turn the salad pasty fast.

    Ingredients
      

    Salad

    • 1 can 19 oz Chickpeas drained and rinsed
    • 1 can 19 oz kidney beans drained and rinsed
    • 2 bell peppers diced
    • 1 cup tomatoes diced (or cherry tomatoes, halved)
    • 2 small cucumbers sliced (or 1 English cucumber)
    • ¼ cup kalamata olives halved
    • 2 green onions sliced

    Vinaigrette

    • ⅓ cup olive oil
    • 1 tablespoon maple syrup
    • 1 teaspoon Dijon mustard
    • Juice of 1 lime or lemon
    • 1 tablespoon dried oregano
    • Salt and pepper to taste

    Instructions
     

    • Drain the chickpeas and kidney beans, then rinse under cold water until the water runs clear. Let them sit in the colander to drip off excess water for a minute.
    • Chop the bell peppers, tomatoes, cucumbers, olives, and green onions into bite-size pieces.
    • Add the beans and chopped veggies to a large mixing bowl.
    • In a small bowl or jar, whisk together the olive oil, maple syrup, Dijon, citrus juice, oregano, salt, and pepper until the dressing looks slightly creamy.
    • Pour the vinaigrette over the salad and toss until everything is evenly coated.
    • Taste and adjust seasoning (beans usually need a little extra salt).
    • For best flavor, refrigerate for 30 minutes before serving. Give it one more quick toss right before you eat.

    Notes

    • If you want less watery salad for meal prep, use cherry tomatoes and blot chopped cucumber quickly with paper towel.
    • Cold salads need more seasoning. Taste again after chilling and add a pinch of salt or a squeeze of citrus.
    • Want it extra filling? Add cooked quinoa, diced chicken, or tuna and call it lunch.
    • For a "tuscan white bean salad" twist, swap in cannellini beans for one or both cans.
