    It's a full mezze board with crispy falafel in the center, surrounded by fresh veggies, creamy tzatziki, tahini sauce, warm pita, olives, and pickled turnips. The kind of spread that makes people think you spent way more time on it than you did.

    I love pulling this together when I've got a mix of store-bought and homemade bits, crispy falafel, a few dips like tzatziki and hummus, plus loads of veggies and warm pita. It's veggie-forward, it's customizable, and it looks way fancier than the effort it takes.

    2. Cook the falafel.
    Use your oven, skillet, or air fryer to warm them up until golden and crispy.

    3. Chop the veggies.
    Dice or slice everything into bite-sized pieces for easy grabbing.

    4. Warm the pita.
    Wrap it in foil and pop it in the oven for a few minutes until soft and warm.

    • Large serving platter or wooden board

    Ingredients
      

    • 16 falafels homemade falafel or storebough
    • 1 cup tzatziki sauce
    • 1 cup tahini sauce
    • 2 cups cherry tomatoes
    • 1 English cucumber sliced
    • 1 package olive mix or use only kalamata olives
    • 1 can 400g stuffed vine leave
    • ยพ cup turnip pickles
    • 3 flatbreads pita wedges
    • 1 lemon cut in quarter cut in quarter
    • fine sea salt and black pepper

    Instructions
     

    • Begin by heating and arranging the falafels on your serving platter.
    • Surround tzatziki and tahini sauce.
    • Place the cherry tomatoes and cucumber slices around the falafels.
    • Place olive mix and pickle turnips in a bowl.
    • Place stuffed vine leaves on the platter.
    • Warm the thin flatbreads of pita and add them to the platter
    • Finally, garnish the platter quarters of lemon

    Notes

    • Falafel options: You can use homemade, store-bought, or frozen falafel. If frozen, warm them in the air fryer at 375ยฐF for 8-10 minutes.
    • Tahini sauce tip: Thin it out with a little lemon juice or water if it's too thick for drizzling.
    • Pita shortcut: Wrap pita bread in foil and warm it in the oven at 300ยฐF for 5-7 minutes. Or microwave in a towel for 30 seconds to soften quickly.
    • Make-ahead tip: You can chop the veggies and prepare the dips the day before, just store everything separately and assemble before serving.
