    Steps-by-step Instructions for the Mexican Shredded Beef

    Mix the spices.
    In a small bowl, combine the garlic powder, chili seasoning, paprika, oregano, coriander, salt, and pepper. Stir until everything looks evenly blended.

    Prep the roast.
    Pat the chuck roast dry. Rub the spice mix all over, pressing gently so it sticks and forms that gorgeous crust as it cooks.

    Build the base.
    Lay the sliced onion on the bottom of the slow cooker. It adds flavor and keeps the beef from sitting directly on the heat.

    Add the liquids.
    Place the seasoned roast on top of the onions. Pour the broth around the edges so you don't rinse off the spices. Drizzle the lime juice right on top.

    Slow cook.
    Cover and cook on low for 8 hours or high for 4 to 5 hours, until the beef is fork-tender.

    Shred.
