    Summer is Calling… and So Are These Creamy Berry Popsicles!

    If you’re like me, summer means two things: fresh berries and anything frozen on a stick. These mixed berry popsicles check both boxes, they’re naturally sweetened, stunningly layered, and super simple to make. Think homemade popsicles with real strawberries, blueberries, and a creamy vanilla twist… dreamy, right?

    They’re freezer-friendly, kid-approved, and feel like a treat even though they’re made with fruit and just a touch of stevia. No dyes, no store-bought mixes, just good ingredients and a blender!

    The ingredients

    Strawberries: Fresh, juicy, and ripe. Trimmed and chopped before blending.

    Blueberries: Washed and blended with water and stevia for the first vibrant layer.

    Stevia: A natural no-calorie sweetener. You can swap for maple syrup or honey.

    Whipping Cream: Use a dairy-free alternative like coconut milk to make it vegan.

    Water: Helps the berries blend smoothly and pour easily into molds.

    How to make the berry popsicles

    1. Prep the blueberry layer.
    Wash the blueberries under running water. In a small bowl, mix them with 1 teaspoon of stevia and ¼ cup of water. Blend until smooth.

    2. Add to molds and freeze.
    Divide the blueberry puree evenly among 10 popsicle molds. Freeze for 3 hours or until firm.

    3. Make the strawberry layer.
    While the blueberry layer freezes, wash and hull your strawberries. Blend them with 1 teaspoon of stevia and ¼ cup of water until smooth.

    4. Add strawberry layer.
    Pour the strawberry puree on top of the frozen blueberry base. Insert popsicle sticks, cover with foil or the mold’s lid, and freeze another 3 hours.

    5. Prep the cream layer.
    Whisk the whipping cream until smooth. If you’re using coconut milk, whisk well to make it creamy.

    6. Pour cream layer and freeze again.
    Spoon in half of your cream mix for a beautiful contrast. Freeze for another 3 hours.

    7. Finish with strawberry (optional).
    Add another layer of the remaining strawberry puree. Freeze one final time — then you're done!

    8. Unmold and enjoy.
    Run the mold under warm water for 10 seconds to release the popsicles easily.

    Tips for Success

    • Use ripe fruit: The sweeter your berries, the better the flavor.
    • Layer patiently: Let each layer freeze fully before adding the next to avoid color bleeding.
    • Blend smooth: A creamy texture makes your popsicles easier to pour and prettier when frozen.

    • Swap the sweetener: Use maple syrup or agave for a refined sugar-free option.
    • Add texture: Mix in a few chopped berries between layers for a chunky surprise.
    • Go tropical: Try mango or pineapple instead of strawberries for a tropical twist.

    • Serve with: These are perfect for poolside snacks, lunchbox treats, or as a dessert for your next BBQ.
    • Storage tips: Keep them in the popsicle mold or transfer to a freezer-safe bag or container for up to 2 months.
    • Pro tip: If stacking popsicles, separate with parchment paper to prevent sticking.

    Can I use other fruit in this recipe?

    After the holiday, try this recipe out with whatever fruit is in season throughout the summer.  I highly recommend peach-mango popsicles. 

    How long do homemade berry popsicles take to freeze?

    Each layer should freeze for at least 3 hours. Total time will be around 9 hours for fully layered popsicles.

    Can I use frozen berries instead of fresh?

    Yes! Just thaw them first and drain any excess water to keep the puree rich and flavorful.

    Ingredients
      

    • 1 ½ cups strawberries
    • ½ cup blueberries
    • 2 teaspoon stevia divided or maple syrup or honey
    • ¾ cup whipping cream or coconut milk
    • ½ cup water divided

    Instructions
     

    • Wash blueberries and blend with 1 teaspoon stevia + ¼ cup water until smooth.
    • Divide into 10 popsicle molds. Freeze 3 hours.
    • Wash strawberries, remove stems, and blend with 1 teaspoon stevia + ¼ cup water.
    • Pour strawberry puree over frozen blueberry layer. Insert sticks and freeze 3 hours.
    • Whisk whipping cream. Add half to molds as third layer. Freeze 3 hours.
    • Top with remaining strawberry puree or cream. Freeze again until fully set.
    • Unmold by running under warm water. Enjoy!

    Notes

    • For extra color separation, freeze each layer fully before adding the next.
    • Coconut milk adds a delicious tropical flavor and makes it dairy-free.
    • Use silicone molds for easier removal.
    • Keep popsicles in an airtight bag to prevent freezer burn.
