    The ingredients

    All the ingredients you need to make the soup: celery, diced tomato, white bean, spices, lentil, parsley, carrot.
    • 1 onion
    • 3 celery stacks
    • 2 carrots
    • 1 cup of dry red lentil
    • 1 can 19oz white kidney bean
    • 1 can 28ozdiced tomatoes
    • 2 garlic cloves minced
    • 4 cups vegetable broth
    • 2 tablespoons Mediterranean Spice Mix
    • salt and pepper to taste

    Instructions

    First step of the soup, sauté the onion and garlic in a pot top view.

    Mince the garlic and dice the onion. Sauté both in a large pot with olive oil over medium heat until the onions are tender. 

    Add the rest of the ingredients

    Bring to a boil. Once it reaches a boil, turn the heat down to low, place a lid on top, and let it simmer for 20 minutes. After 20 minutes, test the lentils to make sure they are tender. If not, continue to simmer until they are tender.

    • 1 onion

      This is a simply delicious soup! I have made it several times and both my wife and I just love it. Extremely flavorful, easy to put together, freezes well, and uses simple easy to find ingredients. We many times serve it with a piece of grilled fish on top. Don't be afraid to use the optional spices mentioned, I add a bit of them all. This soup is a winner!
